Trained alongside renowned French chefs including Christian Constant and Alain Ducasse at Plaza Athénée, before becoming Chef at Les Ombres, Alexandre Semperé brings a cuisine centered on balance, seasonality and the purity of ingredients. His culinary approach highlights vegetables, seafood and carefully sourced products, with a strong focus on short supply chains and exceptional producers. Algae, citrus, vegetables and natural flavors play a central role in his creations, while each ingredient is carefully transformed to reveal its authentic character. At lunchtime, Cléo offers a concise seasonal menu built around land, sea and plant based creations. In the evening, guests can experience immersive tasting menus in five or seven courses, where marine influences and vegetable compositions are combined with precision and creativity. The culinary journey is enhanced by handcrafted tableware created by ceramic artist Carole Fraile, extending the restaurant’s artistic identity beyond the plate.
