Just ten minutes from Montpellier’s vibrant city center, Domaine de Verchant extends over 100 hectares of absolute serenity in Castelnau-le-Lez. Domaine de Verchant is much more than a hotel: it is a living chapter of Montpellier’s history. Founded in 1582, this wine estate, passed down through generations, takes its name from Pierre Verchant, its first known owner. Long preserved within the same family, it retained its soul and character until it was acquired in 2002 by Chantal and Pierre Mestre. Passionate about exceptional places, they brought a new vision to the estate: transforming it into a sanctuary of luxury where hospitality is synonymous with excellence, attention to detail, and deep respect for heritage.
The original blonde stone building, with its majestic vaulted ceilings and noble moldings, preserves its aristocratic allure, while the contemporary extension expresses a carefully considered transformation. Under the direction of Notoire architects, Jordane Arrivetz, and interior designer Marie-Charlotte Mestre, three new buildings were conceived in a spirit of light and fluidity, perfectly in tune with the landscape. Stone converses with glass, natural wood meets metal, and open volumes enhance the views of the vineyards. Inside, the aesthetic is understated: a subtle balance between reinterpreted classicism and discreet modernity, favoring a sense of serenity over spectacle and calm over effect.
With its 25 new rooms and suites, Domaine de Verchant now offers 49 accommodations, each space telling a story of softness and modernity. The palette of natural tones, such as ecru, sand, light wood, and natural materials, evoke the warmth of Languedoc’s lands. The furniture, designed by illustrious names such as Poltrona Frau, Patricia Urquiola, and Cassina, adds a touch of discreet sophistication. Each room, bathed in light through large bay windows, opens onto a private terrace with breathtaking views of the gardens and vineyards. A special mention for the Quintina Presidential Suite, a 300 m² gem combining intimacy, luxury, and exceptional panoramas.
The gastronomic restaurant Marcelle is an ode to Languedoc, led by Chef Alexandre Caillaud, supported by double Michelin-starred Chef Franck Putelat, MOF 2019. In an elegant 48-seat setting, each plate becomes a celebration of the season, taste, and creativity. The estate’s vegetable garden, cultivated using sustainable farming methods over 2,000 sqm, supplies the kitchen with ultra-fresh, perfectly ripe produce. Here, vegetables meet aromatic herbs, fish is subtly enhanced, and sauces are reimagined. The bikes are available to guests wishing to explore the surroundings freely, while the tricycle transports fresh produce from the garden to the kitchen.
