Perfectly located at 81 cours du Médoc, in Bordeaux’s historic Chartrons district, the Mondrian Bordeaux Les Carmes enjoys an environment steeped in heritage and understated elegance. This is Bordeaux at its most authentic: the former home of wine merchants, with golden stone façades and streets shaped by centuries of trade and culture. Just steps from the Garonne River, the hotel sits within a vibrant urban fabric filled with antique shops, galleries, and discreet restaurants. The atmosphere is both deeply historic and resolutely contemporary, a seamless dialogue between past and present.
Before becoming a five-star hotel, the building was one of Bordeaux’s most important wine trading hubs. Built in 1871 as the Hanappier and Calvet wine cellars, it was later expanded under architect Charles Brun in a striking Neo-Gothic style. For nearly two centuries, the site was the beating heart of the Bordeaux wine trade, storing cognac, brandy, and fine wines exported worldwide through its vaulted cellars. A devastating fire in 1966 marked a turning point, followed by reconstruction that preserved the spirit of the site. In 2018, the Pichet Group entrusted the transformation to Philippe Starck, who reimagined it as a contemporary hospitality manifesto balancing memory and imagination.
Behind its elegant limestone façade, the architecture of Mondrian Bordeaux Les Carmes reveals a subtle monumentality. The thirteen bays crowned with battlements, the grand pointed-arch entrance, and historic detailing reflect its industrial past. Philippe Starck, in collaboration with architect Jean-François Le Gal (Advento), preserved this strong identity while infusing it with a sensory, artistic dimension. Inside, raw concrete, natural materials, and plays of transparency create a dialogue between Bordeaux’s heritage and Japanese aesthetic influences. The result is a hybrid, almost theatrical atmosphere where every space becomes an emotional and visual experience.
The hotel features 97 rooms and suites, conceived as luminous and soothing retreats. True to Philippe Starck’s vision, each space emphasizes noble materials: leather, wood, bouclé wool, and natural textures. Earthy tones subtly echo the building’s wine heritage, while clean lines create a sense of calm and clarity. Some rooms open onto private, landscaped terraces, offering a rare sense of outdoor living in the heart of the city. Mirrors, optical effects, and architectural illusions enhance the feeling of stepping into a space suspended between reality and imagination.
At the heart of the culinary experience, Morimoto Bordeaux brings together Japanese precision and Bordeaux terroir. Chef Masaharu Morimoto presents a refined menu blending sushi, sashimi, maki, and signature dishes such as lacquered duck. Local oysters from the Arcachon Bay meet Japanese culinary techniques in a surprising yet harmonious dialogue. Designed like a culinary theater, the restaurant unfolds around an open kitchen and a vibrant sushi bar. The bar and leafy terrace extend the experience into a lively atmosphere, animated by music and evening gatherings.
