Opening on August 1, 2025, Son Xotano marks the fourth property from Annua Signature Hotels, the hospitality group behind acclaimed destinations in Menorca and Lanzarote. Set within a historic 12th-century possessió, one of Mallorca’s traditional rural estates, the hotel has been envisioned as a contemporary country home where guests are encouraged to slow down, celebrate life’s simple pleasures, and reconnect with what truly matters. For Álvaro Sasiambarrena, co-founder and creative director of Annua, the ambition was to create a place that evokes the feeling of coming home. This philosophy permeates every corner of the property, transforming each stay into an emotional experience deeply rooted in the island’s identity.
Architecture That Tells the Story of Mallorca
The architectural restoration was entrusted to Mallorca-based studio ClapésPizà, renowned for its sensitive approach to Mediterranean heritage. Rather than radically transforming the estate, the architects chose to reveal its history by restoring original dry-stone walls, exposed beams, and historic architectural features found throughout the property. Interiors were conceived by Virginia Nieto, a long-time collaborator of Annua Signature Hotels. Drawing inspiration from the island’s colors, textures, and natural materials, she created spaces where soft blues echo Mallorca’s skies while earthy tones reflect the surrounding countryside. Washed linen, local clay, natural wood, brushed metal, and native stone establish an atmosphere that feels warm, elegant, and profoundly calming. Throughout the property, natural light becomes a design element in its own right, constantly reshaping the interiors as the day unfolds.

Son Xotano features 22 guestrooms, including 14 suites, each unique yet connected through a shared philosophy of understated comfort and authentic luxury. Generous proportions, vaulted ceilings, arched openings, and natural materials reinforce the feeling of staying in a private Mallorcan residence rather than a traditional hotel. Rooms open onto private gardens, loggias, terraces, or balconies overlooking vineyards and olive groves. Bathrooms are particularly spacious and refined, combining sandstone basins, matte brass fixtures, handcrafted ceramic tiles, and Aesop amenities to extend the sensory experience into every detail.

The culinary program at Son Xotano is led by José María Borrás, the award-winning Menorcan chef widely regarded as one of the most exciting young talents in Spanish gastronomy. At El Celler, the estate’s historic wine cellar transformed into an intimate restaurant, stone walls, artisanal ceramics, and soft lighting create a warm and welcoming atmosphere. Dining also unfolds in the central piazza beneath vine-covered pergolas or among the estate’s gardens. Ingredients are sourced primarily from nearby farms and the surrounding region, celebrating Mallorca’s rich agricultural heritage through a philosophy of proximity and seasonality.
