We Tested the Forestis Dolomites Hotel

Perched at 1,800 meters above sea level in the heart of the Dolomites, the Forestis Dolomites experience begins with the very first glance at the peaks. Setting off from France to reach the heart of the Dolomites is already an adventure in itself. We chose to make a first stop in Venice, enjoying a night in this magical city before catching the train at dawn. The journey continued to Verona, and then onward to Bressanone/Brixen. Upon arrival, a driver was waiting for the final leg: a winding road that took us through forests and valleys. A small tip: it’s better to look at the panorama rather than at your phone, unless you want to risk dizziness.

Arrival at the Summit and First Immersion

Upon reaching the hotel, perched at 1,800 meters, the view literally took our breath away. Forestis Dolomites stretches across the heights of Bressanone/Brixen, just an hour from the Austrian border, offering a unique panorama of the Dolomite peaks. From the moment we arrived, we were welcomed into the historic wing, where the décor blends authenticity with modernity, and offered a welcome drink made with spruce syrup—a first sweet, foresty note that sets the tone for the stay.

Our suite, located on the 10th floor of the central tower among the hotel’s three towers, is a true haven of light. These towers, designed like tree trunks and clad in dark wood, blend perfectly into the landscape. Our Tower Suite, about forty square meters, with minimalist Scandinavian design, combines local wood on floors and walls, polished concrete in the bathroom, floor-to-ceiling windows, and a panoramic terrace. Local apples and a welcome note made us feel immediately at home. The bed is large and incredibly comfortable. Natural bath products scented with forest aromas, along with spruce-colored towels and robes, echo the surrounding environment. Each morning, the sunrise transforms the landscape, which seems to shift hour by hour, offering a living canvas to admire from the spacious outdoor sofa or the bed facing the peaks.

Breakfast with a Mountain View

In the morning, breakfast becomes a ritual suspended in time. The amphitheater-style dining room, where each table is reserved in our name for the duration of the stay, lets in light that reveals the Dolomites with every sunbeam. Through the enormous windows, the morning light floods the room—sometimes so bright that sunglasses are necessary to enjoy your coffee. Served as a buffet with à la carte options, breakfast is abundant and refined: local products, aged cheeses, Italian charcuterie, fresh juices, organic milk from cows grazing in nearby alpine pastures, berries, cereals, a variety of breads… even a cold-press bar to create your own custom juice. Every detail, from poached eggs to homemade pastries, is designed to awaken the senses and extend the magic of the landscape.

Forest Cuisine: The Mountains on Your Plate

Dinner at the Forestis Dolomites restaurant is an experience in itself—a true celebration of the mountains. Nestled in comfortable circular booths, both soft and intimate, we discovered a chic, cozy atmosphere, lit by candlelight and the reflections of the peaks on the windows. Chef Roland Lamprecht, a native of South Tyrol and former chef at Europe’s top tables, elevates the treasures of his region with daily renewed menus. The Tasting and Detox menus, consisting of seven courses, are designed as a sensory journey: each dish pays homage to the surrounding nature. Bread, butter, herbs, fish, vegetables, and berries change every evening so that no dinner ever feels the same. The result? Light, precise, and inventive alpine cuisine where every bite tells the story of the Dolomites, balancing authenticity with modernity.

Spa and Moments of Well-Being

The 2,000 sqm Forestis Spa is a true sanctuary of relaxation. Indoor-outdoor heated pool, saunas at varying temperatures, enveloping hammam, treatment rooms overlooking the mountains… everything here is designed to reconnect body and mind with nature. We enjoyed a massage with spruce and larch essences, a soothing, immersive experience where the woody scents recall the forest surrounding the hotel. Swimming afterward in the outdoor heated pool at 30 °C, steam rising, while watching the peaks glow in the sunset, is almost ecstatic. Everywhere, numerous relaxation corners invite total letting go: quiet alcoves, comfortable beds, outdoor loungers facing the mountains. A few steps away, the library space extends this bubble of serenity: plush chairs, books about nature and the Dolomites, infused waters, fresh and dried fruits freely available. Everything here encourages slowing down, taking deep breaths, and savoring the luxury of calm.

Activities, Hiking, and Nature

Between moments of luxury, the mountains call. The hotel offers several activities, including guided hikes, ski-in/ski-out in winter, mountain biking, and Wyda—a Celtic energy practice connecting breath, movement, and mindfulness. The wellness center also features a multi-sauna circuit, an essential element of alpine regeneration. Forestis Dolomites provides direct access to hiking trails and ski slopes, perched at 1,800 meters in the Dolomites. Here, every activity, whether sporty or contemplative, is designed to harmonize body and mind and prolong the magic of the surrounding mountains.
